|
|
|
8 oz.
Neufchatel Cheese (lowfat cream cheese)
|
2 T. plain
yogurt
|
|
2-3 T.
flour
|
grated
carrots
|
|
2 T. honey
|
|
Preheat oven to 400 ° F (200 ° C).
Grease muffin tins.
Core, slice and mince the apple (use a
food processor if you have one). Set aside. In a large bowl, mix together
flour, oatmeal, baking powder, and baking soda. In a medium bowl, blend
together the yogurt, water, oil, honey, and eggs, then stir in the apple and cheese.
Add to the flour mixture and stir until mixed.
Spoon into the muffin tins, filling
each cup about three-quarters full. Bake for about 20 minutes or until a
toothpick inserted in the center of a muffin comes out clean. Let rest in the
muffin tins for a few minutes, then remove and set aside to cool.
For the frosting, combine the
Neufchatel cheese (at room temperature), honey, and yogurt until smooth. Add
enough flour to thicken the frosting to a good spreading consistency. Frost the
pupcakes, sprinkle them with finely shredded carrots as garnish, and you're
ready for a doggone good party!
Makes 16-18 pupcakes. If you prefer a
single-layer cake, spoon the batter into a sheet pan and bake for an extra
15-20 minutes (or until a toothpick inserted in the center of the cake comes
out clean). Let the cake cool, then frost and decorate with carrot shavings.

Congo Squares
Toll House Cookies without the time demands. Moist, filling and
exceptional. Can be cut in holiday shapes with cookie cutters.
¾ cup organic butter / room temperature
2 ¼ cups (soft) dark brown sugar (raw turbano sugar optional)
3 farm brown eggs (room temperature)
2 ¾ cups organic all purpose flour
3 teaspoons non-aluminum baking powder
¼ teaspoon sea salt (optional)
1 cup chopped black walnuts
6 ounces semi-sweet chocolate chips or small chopped pieces of your favorite
chocolate.
Personally, I love bittersweet (just like life) chocolate
Oven: 325 degrees
Pan: 13 x 9 Pyrex pan lightly sprayed
with non-stick spray
Directions:
In one bowl combine the butter and sugar together with a whisk, creaming them
together well, making sure they are well combined. Set aside.
In another bowl combine the flour, baking powder, sea salt, walnuts and
chocolate chips. Mix well. Reserve
While remixing the butter and sugar, add the eggs one at a time (yes you can
use an electric mixer, but it is more fun and you have more control doing it by
hand). Fold in the dry ingredients, careful not to over mix. Place
in Pyrex pan and place in the upper shelf of the pre-heated oven.
Bake for 25 to 30 minutes until the batter just begins to pull away from the
edges of the pan and a toothpick placed in the middle comes out relatively
clean. Cut into desired shapes when cool.
Most Sincerely:
Chef Paul J. Seaman and his sister Janet.
